PENGETAHUAN DAN SIKAP PENJAMAH MAKANAN TENTANG HIGIENE SANITASI PENGOLAHAN PANGAN DI RUMAH MAKAN WILAYAH BEKASI

Background: Food safety remains a public health concern due to the suboptimal implementation of higiene and sanitation practices in food processing. The knowledge and attitudes of food handlers play an important role in preventing food contamination, particularly in restaurants. Objective: This study aimed to describe the knowledge and attitudes of food handlers toward higiene and sanitation practices in food processing at restaurants in the Bekasi area. Method: This study employed a quantitative approach using a survey method. The sample consisted of 63 food handlers selected through total sampling. Data were collected using structured questionnaires that measured food handlers’ knowledge and attitudes related to food processing higiene and sanitation. Data analysis was conducted descriptively by presenting frequency and percentage distributions. Results: The results showed that a proportion of food handlers still had poor levels of knowledge (57,1%) and attitudes (55,6%) toward food processing higiene and sanitation. Conclusion: This condition indicates a potential risk to food safety in restaurants in the Bekasi area. Therefore, continuous education, training, and supervision on higiene and sanitation are needed for food handlers to improve food safety.
